A beautiful weekend . . .

We had a fun photo shoot with a lovely couple at their lake home. It included a barn & pretty sunset light on the water. Hope your weekend was fun as well.

There is a section of the Organic & Chic cookbook called Reformed Junk Food and these are a version of twinkies that I'd love to try. I also love how she paints everything with edible gold.

Vanilla Bean Cake with Pastry Cream & Brown Sugar Buttercream

A good friend just bought us the Organic and Chic Cookbook so I decided to try it out. I also always love the recipes in Martha's Baking Handbook. So I made my own combo. I have been majorly craving cake lately, so this was a nice treat. I have to say the start of the show here is the Brown Sugar Swiss Meringue Buttercream.
(make time for baking, it just makes life better)

Chorizo Home Fries

My husband and I ate at an amazing Cuban restaurant in the West Village once, which for some reason I can't remember the name of, but anyway, we ordered an amazing Chorizo Home Fries dish. So I tried to recreate it myself. Pretty yummy.

Green Onions
Salt & Pepper

Chop everything into bite sized pieces. Fry sausage to render fat. Remove sausage from Pan. Add a little butter to the pan for extra frying fat for the Potatoes. Add potatoes, plus the salt and pepper, and cook until tender. Add sausage back to pan, plus chopped green onions.

Lemon Bars

These are my favorites. I've been craving to bake lately. I overcooked these a little, but they were still very yummy!

2 sticks (8 ounces) butter
2 cups flour
1/2 cup confectioners' sugar
4 beaten eggs
2 cups sugar
4 tablespoons flour
1/4 cup lemon juice
1 tablespoon finely grated lemon peel
sifted confectioners' sugar

Heat oven to 325°. Blend butter, 2 cups flour and 1/2 cup confectioners' sugar. Pat into ungreased 13x9x2-inch pan. Bake for 18 to 20 minutes. For filling, blend together eggs, sugar, 4 tablespoons flour, lemon juice, and lemon peel. Pour over first layer. Return to oven and bake at 325° for 20 minutes. Loosen around edges, cut into bars and sift confectioners' sugar over the top while warm.
